Coffee Chiffon Cake with Vanilla Swiss Buttercream
This is a super light and fluffy Coffee Chiffon Cake with a luxurious, velvety Vanilla Swiss Meringue Buttercream. It is mild in sweetness but bold in coffee flavour. I made this for my in laws when they visited from Switzerland who literally live on caffeine and walk around with a coffee drip. This is also one of my personal favourite. It reminds me of the swiss rolls I had in Hong Kong during my childhood - the fragrant coffee aroma as you bite into the pillowy sponge and the slightly savoury buttercream.....ahhhhhhhh.
